So I have got too it straight away, nipping to the local shop to grab some bits on the way home and using what I already have. So I made a rub for the chicken with ground almonds, cayenne pepper and mustard seed and on the reverse side of the chicken just used chilli flakes to add a bit of spice. I ground the rub to a paste (almonds will make butter eventually the more you grind). I served with asparagus, boiled egg and sweet potato mash (microwave potato and add cayenne pepper).
The verdict:
I have never had a boiled egg before and it was surprisingly lovely.
The almond butter added a sweet nuttiness to the chicken which was tasty
I had to stop myself reaching for the cherry coke half way through and opted for a pint of water instead! I'm not sure how long I can go without diet coke but I am going to give it a go!
